Garlic Scapes

**While we have them!**

There are different types of Garlic to grow, Some of our varieties are Hardneck Garlic, which is easily identified when breaking apart the head, there will be a hard stem running up the center. Just before this garlic is ready to dig, the plant begins to shoot out a scape, which is actually the flowering stem of the plant. Scapes are cut from the plant just as they start to curl, giving back energy to the head for bigger growth. If not removed, the garlic head would be smaller.

Scapes are amazing in flavor, in fact, they are a lot like a garlic flavored scallion! They are tasty in tons of recipes, grilled, sauteed, even pickled and fermented! Since they are only available once a year, we always look forward to scape time! They last for a couple months in the crisper drawer of your refrigerator, just simply put into a bag, and leave it open for air circulation to prevent moisture buildup.

With over 1,000 hard neck garlic getting close to harvest, you can imagine that we will be flooded with scapes very soon. The next 30 days should be filled with harvesting them!
